SPICY HOLIDAY MEATBALLS

These spicy meatballs are boldly flavored with our pineapple hot sauce, cumin, paprika, and cayenne. The sauce is awesome with our Sweet Garlic & Habanero Sauce, and you can serve these meatballs over regular or cauliflower rice, as an entree or even as a crowd-pleasing appetizer at your next holiday party!

INGREDIENTS:

Tomato Sauce
1 tablespoon olive oil
1 tablespoon minced fresh garlic
1 teaspoon kosher salt
1 teaspoon sweet paprika
1 teaspoon ground cumin
¼ teaspoon cayenne pepper
3 chopped tomatoes, or two 15oz cans diced tomatoes, undrained

Meatballs
1 lb. 85% lean ground beef
1 teaspoon Diamond Crystal kosher salt
1 teaspoon onion powder
1 teaspoon sweet paprika
1 teaspoon ground cumin
1 teaspoon ground coriander
½ teaspoon ground cinnamon
¼ teaspoon cayenne pepper

DIRECTIONS:

Prepare the tomato sauce:
In a wide, heavy saucepan, heat the olive oil over medium heat, about 3 minutes.
Add the garlic and cook 1 minute.
Add the spices, hot sauce and cook, stirring, 30 seconds.
Add the chopped tomatoes. Bring to a boil, then lower heat and simmer for 10 minutes.

Prepare the meatballs:
In a medium bowl, use your hands to mix the meat, spices and hot sauce.
Divide into 24 equal portions (each weighs about 20 grams) and shape into small, 1-inch meatballs.
Heat the vegetable oil in a saucepan and lightly fry the meatballs.

Add the fried meatballs to the tomato sauce. Turn heat to medium-high and bring to a boil, then lower heat back to medium-low, cover and simmer for 30 minutes.

...and ENJOY!
